first of all, apologies to my brother who is on the South Beach Diet and has to look at this photo.

 

i've been making chocolate chip cookies forEVER, but have just recently come across the best recipe i've ever used. and yes, it's even better than that tollhouse recipe. i've made it several times in the past few weeks: for friends who just had a baby, for friends who just moved, for my family visiting last week, and now today because it rained and we needed something to shake off the crabby-cranks that rainy days like to bring with them.

so i'm sharing my new favorite chocolate chip cookie recipe ever. the best part about this recipe is that you don't have to remember to set out sticks of butter on the counter to soften a few hours before you start since you use melted butter, not softened butter.


CrispyChewy Chocolate Chip Cookies

this recipe is very easy to double, and i often do. because semi-sweets come in 12 oz bags and who wants to save or waste a half bag of chocolate chips because i don't know about you, but those things do not have a long shelf life once opened in our house. if you know what i mean.

1 stick butter, melted
1 egg
1/2 cup sugar
3/4 cup brown sugar
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla
1 1/2 cups flour
6 oz. semi-sweet chocolate chips

Preheat oven to 350 and lightly grease cookie sheet.
Beat melted butter and egg, add sugars and mix well. Stir in vanilla, soda, and salt. Mix with flour and chips.
Place 1" balls of dough at least 2" apart on greased cookies sheets. Bake 10 min (or 14 or 13...depending on the mood of your oven). Cool cookies on cookie sheet before removing them to cooling rack.

I use a very similar recipe where you melt the butter first and they have become my favorite! I'll have to try this one too. I think the only difference is the amounts of flour and sugar are slightly different. Now I really want a cookie!!

YES YES YES!!! I always use melted butter, too. Alton Brown taught me that on "Good Eats" on the Food Netowrk. He had a whole show on choc chip cookies and showed how you could come out with cakey, crispy, or chewy cookies depending on how you combined and used the same ingredients. Seriously my fave show ever. ;p I'm a chewy fan, so I melt my butter and use more brown sugar than white, like he taught me.

I'm pretty sure I can have cookies next week. I've been planning on baking a batch and I might just use yours! Where'd you get the recipe?

I'm also looking at a recipe for oatmeal-raisin cookies (my favorite kind) from America's Test Kitchen, my current favorite group of cooks.

LOVE cookies recipes!!! I have been feeling very "june cleaverish" lately too. Trying new recipes for cookies or cakes from scratch. Leah is in heaven. Don't get me started on frosting--i am very picky and LOVE homemade buttercream! I am longing for the day (could be very soon!!??) that I will have a bigger, newer kitchen to cook in...Can't wait to try your choc chip recipe!! Sus

Thank you, thank you! This is now my favorite chocolate chip recipe, too! Finally a cookie that is soft but chewy, just the way I like them.

I've learned, recently, that I need to stop cutting back on the sugar in cookie recipes. I have plenty of recipes in which I can cut back the sugar significantly and they're just as good, but it changes the texture of the cookies. :( So I'll just have to stop pretending I can make cookies into health food....
