yesterday, we made homemade pizza. BBQ chicken pizza to be exact. it was delicious. kenny grilled the chicken to perfection with my favorite BBQ sauce (i love making my own sauce, but i love this flavor in the summer months, despite all the prefab ingredients!) and it had just the amount of mozarella and BBQ sauce on the crust.

we enjoyed yesterday's pizza with a local white wine and a bag of potato chips (a compromise between our favorite ways to eat pizza).

let's talk about making our own pizza crust now, shall we? i love sending out requests to you all for your best recipes. (i am holding onto all of your salsa recipes for as soon as our tomatoes and peppers are ripe.) we love to make our own crusts, and kenny's been pretty pleased with the crusts that we've tried so far. but i'm picky. and there's just this little flavor thing in the doughs that we make that doesn't taste right to me. i read this morning that the secret is to use bread flour instead of all purpose flour. i'm trying that next. but i thought i'd send out a request for your favorite homemade pizza crust recipes. i've got all the ingredients for some more pizza (more BBQ chicken and some pepperoni for the less adventurous pizza eaters, namely everyone under 5 in our house).

so, email or leave a comment with your favorite dough recipe as soon as possible. or your computer will blow up.

just kidding.

The recipe says you don't have to let the dough rise, but I found it comes out alot better if you do let it rise for about 30 min.

I also really like the thick pizza crust in the Betty Crocker cookbook. I think it tastes better than the first, although it does take longer to make.

2 1/3 to 3 cups all purpose or bread flour
1 tablespoon sugar
1 package regular or quick active dry yeast (2 1/4 teaspoon)
3 tablespoons olive or veg. oil
1 cup very warm water (120 -130)
cornmeal to sprinkle on pan

Mix 1 cup of the flour, the sugar, salt and yeast in a large bowl. Add 3 tablespoons of oil and the warm water. Beat with electric mixer on medium speed 3 minutes, scraping bowl frequently. Stir in enough remaining flour until dough is soft and leaves sides of bowl. Place dough on lightly floured surface. Knead 5-8 minutes or until dough is smooth and springy. Cover loosely with plastic wrap and let rest 30 min.

For Thick Crusts: Grease 2 square pans, 8x8x2 or 2 round pans, 9 x 1 1/2, with oil. Sprinkle with cornmeal. Divide dough in half. Pat each half in bottom of pan. Cover loosely with plastic wrap and let rise in warm place 30 - 45 min. or until almost double. Move oven rack to lowest position. Heat oven to 375. Partially bake 20-22 min. or until crust just begins to brown. Add toppings and bake at 375 about 20 min.

I don't have a dough recipe - our grocery store in Georgia, Publix, made the BEST dough fresh daily in their bakery and sold it for like $1. We ate homemade pizza seriously at least once a week. Miss that...

Are you using a pizza stone? I fell in love with ours when we were making so much!

And for the record - BBQ pizza is my ULTIMATE FAVE pizza!!! (Along with pineapple!!!)

I'll have to look mine up tonight and get back to you but I have a great one! i love making homemade pizza! i use half wheat flour in mine. Gives it a great flavor.

I do my dough in the breadmaker, but it should come out fine if you just stir everything together and knead and let it rise a bit.

1 c. water
scant tsp salt
2 Tbs olive oil
1 1/2 c all purpose flour
1 1/2 c whole wheat bread flour
1 1/2 tsp yeast

We have tried more ww than that, but it just doesn't taste right.
